Cette phrase est tirée de la chanson Bahia, de Véronique Sanson. Et quand j’entends ça, j’ai envie d’y être, à Bahia.
Dans le tourbillon incertain d’un mois d'avril, où les caprices météorologiques se sont joués de nos attentes printanières, que les nuages gris s'accrochent obstinément au ciel, je n’ai trouvé qu’un seul remède.
Le parfum alléchant de ces délices belges qui emplit ma cuisine, apportant avec lui une lueur de chaleur et de réconfort. Tel un bouclier contre les averses incessantes et les rafales froides, une bouchée de ces gaufres croustillantes et moelleuses me transporte instantanément dans un cocon de bonheur et de réconfort, à Bahia.
L'art de préparer ces trésors sucrés est un rituel réconfortant en soi, une danse entre la douceur de la pâte et la chaleur légère du gaufrier. Alors que les gouttes de pluie tambourinent contre les fenêtres, je me réfugie dans ma cuisine, armé de farine, de sucre perlé et d'une pincée de levure, prêt à conjurer la morosité ambiante avec chaque gaufre dorée qui émerge de la plaque chauffante.

Il y a quelque chose de magique dans la transformation de simples ingrédients en gourmandise et en réconfort. Alors que le mois de mai continue de nous défier avec ses humeurs changeantes, prenons une pause bien méritée pour savourer le réconfort d'une bonne gaufre liégeoise. Car au-delà de sa simplicité apparente, chaque bouchée nous rappelle que même dans les jours les plus sombres, il y a toujours une lumière, un espoir, une gaufre, pour nous ramener à la joie simple d'un goûter par jour de pluie. Un goûter qui nous fait voyager à Bahia.
Pour environ 15 gaufres
500gr de farine T45
30gr de sucre roux
220gr de lait demi-écrémé
250gr de beurre doux pommade
2 œufs
10gr de levure boulangère déshydratée
6gr de sel
220gr de sucre perle
Verser dans la cuve d’un robot muni d’un crochet, la farine, le sucre, le sel, l’œuf, le lait et la levure puis pétrir 5 min en vitesse lente / moyenne.

Une fois que le mélange est homogène, ajouter le beurre en plusieurs fois.
Mélanger 5 à 10 min vitesse moyenne, jusqu'à ce que la pâte se décroche des bords de la cuve.

Dégazer et ajouter le sucre perle, puis laisser pousser à nouveau 1 heure, la pâte doit redoubler de volume.

The tantalizing scent of these Belgian delights filling my kitchen, bringing with it a glow of warmth and comfort. Like a shield against incessant showers and cold gusts, a bite of these crispy and soft waffles instantly transports me to a cocoon of happiness and comfort in Bahia.
The art of preparing these sweet treasures is a comforting ritual in itself, a dance between the softness of the dough and the light heat of the waffle iron. As raindrops drum against the windows, I take refuge in my kitchen, armed with flour, pearl sugar and a pinch of yeast, ready to ward off the ambient gloom with each golden waffle that emerges from the griddle.

As gray days slowly give way to the promises of spring's renewal, a bite of these Liège waffles reminds us that even in the midst of storms, there is always the possibility of creating a corner of sweetness. As the month of May continues to challenge us with its changing moods, let's take a well-deserved break to savor the comfort of a good Liège waffle. Because beyond its apparent simplicity, each bite reminds us that even in the darkest days, there is always a light, a hope, a waffle, to bring us back to the simple joy of a snack on a rainy day . A snack that takes us on a journey to Bahia.
Makes about 15 waffles
500 g of T45 flour
30 g of brown sugar
200 g semi-skimmed milk
250 g soft softened butter
2 eggs
10 g of dehydrated baker's yeast
6 g of salt
110 g of pearl sugar
Pour the flour, sugar, salt, egg, milk and yeast into the bowl of a mixer fitted with a hook, then knead for 5 minutes at slow/medium speed.
Once the mixture is homogeneous, add the butter in several batches.
Mix for 5 to 10 minutes at medium speed, until the dough comes away from the sides of the bowl.
Leave to rise for approximately 1 hour 30 minutes until the dough doubles in volume.
Degas and add the pearl sugar, then leave to rise for another hour, the dough should double in volume.
Without degassing the dough, take a ball with a tablespoon, and cook in a maximum power waffle maker, the same.
The goal is to have the crispy side on top and soft inside.
